Blending past and present flavours, in constantly changing combinations; marrying the riches of our local produce with produce from elsewhere… This is the trend on our new 2017 Menu.
Driven by the passion that I lavish on the design of each recipe, I attach special importance to the selection of the products. As part of our quality policy, we source them essentially from regional farms and producers and they are of controlled origin. The fruit and vegetables are all seasonal, the fish and shellfish from the wild.
Imbued with a welcoming spirit, in harmony with the natural decor of La Table du Cantemerle, this Menu will, I hope, take you on a voyage of discovery to the heart of the spirit and flavours of my cuisine.
